He is an articulate man and covers all the issues faced by modern businesses from authentic motivation of staff to protection of endangered species. At the heart of his philosophy is a respect for the role food plays in our lives. We are so used to the idea of industrial food that we find the idea of natural food, its seasonality and locality, either to inconvenient or, worse, alien.
